  • ÂĽ tsp garlic powder

For the Hollandaise Sauce:

Instructions

Step 1: The Perfect Sear

Season the ribeye with salt, pepper, and garlic powder, and set-aside allowing the ribeye to room temperature.  Once the ribeye is at room temp, heat 1 tablespoon of tallow or ghee in a heavy-bottomed pan over medium-high heat until hot. 

Place the steak in the pan and sear for 3-4 minutes per side, spooning 1 tablespoon of butter over the top as it cooks. The butter melds with the steak’s juices, creating a beautifully caramelized crust. Once done, remove from the heat and let it rest.

Step 2: Hollandaise, the Silky Finishing Touch

While your steak is resting, grab a small heatproof bowl and whisk together 1 egg yolk and 1 teaspoon of lemon juice. SLOWLY drizzle in 2 tablespoons of melted butter, whisking continuously until the sauce turns thick and creamy. Add a pinch of salt, some fresh thyme leaves, and just like that, your hollandaise is ready. If you want are a fan of blue cheese and want to elevate your hollandaise more, add some crumbles to the hollandaise (but don’t melt it in), it’s next level.

Step 3: Bring It All Together

Once the steak has rested, plate it and drizzle generously with the warm hollandaise sauce. For an extra layer of richness, melt the remaining 2 tablespoons of butter and pour it over everything.
